The disinfectant power of ozone, a completely natural gas formed by three oxygen atoms, has been known and used for a long time both in the medical and health fields as well as in the sectors of food preservation, air conditioning, sanitization and, more generally, in the treatment and prevention of infestations by mold, bacteria, viruses and parasites (see Ministry of Health protocol no. 24482 of 31 July 1996).

The strong oxidizing power of ozone allows the gas to oxidize and inactivate numerous organic compounds (phenols, benzene, trihalomethanes, pesticides) and inorganic compounds (cyanides, sulphites, nitrites). Ozone is also able to oxidize iron, manganese and other minerals, which, especially if complexed, can be very difficult to remove. At the cellular level, the main toxic effects of ozone are also attributable to its oxidative power and therefore to the ability to oxidize and peroxidize biomolecules, both directly and indirectly (Khadre et al., 2001).

The oxidizing action of ozone has meant that since its discovery it has been used as a bactericidal, fungicidal and virus inactivating agent (Table 2). It was initially used as a disinfectant in the production of drinking water, in France since 1906 and in Germany since 1972. The choice of ozone was based on the fact that it is more effective than other disinfectants against a wider spectrum of microorganisms (source: Ministry of Health CNSA 27 October 2010)

CENNI NORMATIVI

USA – In seguito alla documentazione fornita dall’EPRI (Electric Power Research Institute) e da un gruppo di esperti che hanno valutato l’efficacia e la sicurezza dell’ozono nella lavorazione e conservazione degli alimenti, il 26 Giugno 2001 la FDA, organismo della United States Department of Health and Human Services, ammette, a convalida della compatibilità dell’ozono con le attività umane, l’impiego di ozono come agente antimicrobico in fase gassosa o in soluzione acquosa nei processi produttivi (trattamento, lavorazione, conservazione) di alimenti come carne, uova, pesci, formaggi, frutta e verdura. In particolare il documento 21 CFR parte 173.368 (registro n°00F-1482) ha etichettato l’ozono come elemento GRAS (generally recognized as safe) ossia un additivo alimentare secondario sicuro per la salute umana.

Italia – Il Ministero della Sanità con protocollo del 31 Luglio 1996 n°24482, ha riconosciuto l’utilizzo dell’ozono nel trattamento dell’aria e dell’acqua e come presidio naturale per la sterilizzazione di ambienti contaminati da batteri, virus, spore, muffe ed acari
