Le Minist\u00e8re de la Sant\u00e9 a \u00e9galement mis en place un syst\u00e8me de gestion de l'environnement, dans le traitement et la pr\u00e9vention des infestations de moisissures, bact\u00e9ries, virus et parasites (voir protocole du Minist\u00e8re de la Sant\u00e9 n\u00b0 24482 du 31 juillet 1996).<\/p><p>Le fort pouvoir oxydant de l'ozone permet au gaz d'oxyder et d'inactiver de nombreux compos\u00e9s organiques (ph\u00e9nols, benz\u00e8ne, trihalom\u00e9thanes, pesticides) et inorganiques (cyanures, sulfites, nitrites). De plus, l'ozone est capable d'oxyder le fer, le mangan\u00e8se et d'autres min\u00e9raux qui, surtout s'ils sont complex\u00e9s, peuvent \u00eatre tr\u00e8s difficiles \u00e0 \u00e9liminer. Au niveau cellulaire, les principaux effets toxiques de l'ozone sont \u00e9galement imputables \u00e0 son pouvoir oxydant et donc \u00e0 sa capacit\u00e9 \u00e0 oxyder et peroxyder les biomol\u00e9cules, tant directement qu'indirectement (Khadre et al., 2001).<\/p><p>L'action oxydante exerc\u00e9e par l'ozone a fait que depuis sa d\u00e9couverte, il a \u00e9t\u00e9 utilis\u00e9 comme agent bact\u00e9ricide, fongicide et inactivateur de virus (tableau 2). Il a d'abord \u00e9t\u00e9 utilis\u00e9 comme agent d\u00e9sinfectant dans la production d'eau potable, en France depuis 1906 et en Allemagne depuis 1972. En particulier, le document 21 CFR part 173.368 (n\u00b0 d'enregistrement 00F-1482) a \u00e9tiquet\u00e9 l'ozone comme un \u00e9l\u00e9ment GRAS (g\u00e9n\u00e9ralement reconnu comme s\u00fbr), c'est-\u00e0-dire un additif alimentaire secondaire sans danger pour la sant\u00e9 humaine.<\/p><p><strong>Italie<\/strong> - Le Minist\u00e8re de la Sant\u00e9, avec le protocole du 31 juillet 1996 n\u00b024482, a reconnu l'utilisation de l'ozone dans le traitement de l'air et de l'eau et comme aide naturelle pour la st\u00e9rilisation des environnements contamin\u00e9s par des bact\u00e9ries,
